Lettuce Wraps

Serves 4.

Ingredients

  • 1 tbsp olive oil
  • 1 lb ground chicken
  • 2 cloves garlic, minced
  • 1/2 white onion, finely diced
  • 1/4 cup hoisin sauce
  • 2 tbsp soy sauce
  • 1 tbsp rice wine vinegar
  • 1 tbsp freshly grated ginger (optional)
  • 1/2 tsp sesame oil
  • 1 tsp sugar
  • 1 tbsp sriracha
  • 8 oz whole water chestnuts, drained and diced (optional)
  • 2 green onions, thinly sliced (optional)
  • salt and pepper, to taste
  • 1 head, butter lettuce

Instructions

  1. Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook until browned, crumbling as you go (about 5 minutes).
  2. Stir in garlic, onions, hoisin sauce, soy sauce, rice wine vinegar, ginger, sesame oil, sugar, and sriracha. Stir occasionally, cook until onions are soft and translucent (~2 min).
  3. Stir in chestnuts, sliced onions, salt/pepper, and heat for an additional minute.
  4. Spoon 3-4 tablespoons onto the center of each lettuce leaf and enjoy.
