Feta Pasta

Ingredients

  • 2 pt. cherry or grape tomatoes
  • 1 shallot, quartered (optional)
  • 3 cloves garlic, smashed (optional)
  • 1/2c extra virgin olive oil
  • Kosher salt
  • Crushed red pepper flakes
  • 1oz block feta
  • Onion powder
  • Garlic powder
  • Italian seasoning
  • 10oz pasta

Instructions

  1. Preheat oven to 400.
  2. Combine all and season to taste.
  3. Place feta in mixture and drizzle with olive oil.
  4. Bake for 30 minutes until tomatoes are bursting and feta is golden.
  5. Meanwhile, cook pasta according to package instructions.
  6. Add cooked pasta to skillet; stir completely until combined.
