Chicken Pesto Sandwiches

Serves 2.

Ingredients

  • garlic
  • onion powder
  • salt
  • red pepper flakes (optional)
  • 2 chicken breasts
  • Pesto
  • Sourdough bread
  • Oil (basically any kind is fine)
  • Butter
  • Provolone

Instructions

  1. Pound chicken thin to flatten it out and season it with garlic, onion powder, salt, and red pepper flakes (if desired), add a little oil to the cast iron skillet to cook it at medium heat.
  2. Assemble the chicken, provolone, and pesto to make two sandwiches on sourdough bread.
  3. Add butter to a nonstick pan at medium heat, searing either side of the sandwiches until they’re toasted.
